Easter (Spring) Celebration

Roast Pork Loin

Ingredients:
  • 6 lb. pork loin
  • 1/2 cup soy sauce
  • 1 tsp. ground ginger
  • 1 cup orange marmalade

  • Directions: Place loin in roasting pan fat side up. Spear loin with toothpick. Pour soy sauce over loin. Sprinkle with ginger. Roast uncovered in a 375 degree oven until temperature gauge reads 130 degrees (approximately 11/2 hours). Remove loin from oven and spread with marmalade. Return to oven and continue roasting until thermometer reads 150 degrees, approximately 45 minutes. Baste with pan juices every 10 to 15 minutes. Serve on platter, garnished with greenery and orange twists. Serves 12-16.


    Baby Red Potatoes

    Ingredients:
  • 5 lbs. red potatoes (washed and unpeeled)

  • Directions: Par boil potatoes until parboiled. Drain and place in baking pan. Cover with 1/2 cup melted butter (olive oil may be used), 2 tbls. fresh rosemary leaves, and salt and pepper to taste. The potatoes may be covered and refrigerated overnight. Roast in 400 degree oven for 30 minutes, until golden brown and crispy edges. Serves 16.


    Baby Carrots

    Ingredients:
  • 3 lbs. baby carrots
  • 1 1/1 cup chicken stock (water may be used)

  • Directions: Cook until tender but firm to touch. Drain. Add 1/2 cup honey, 1/2 cup sour cream, 2 tsp. dried dill weed. May be refrigerated for two days. Reheat before serving. Serves 12.
