Southwestern Quesadilla Bar

Traditional Quesadillas

Ingredients:
  • Southwestern seasoned chicken
  • Sauteed peppers
  • Monterey Jack cheese

  • Directions: Spread the southwestern chicken (Cooked and seasoned with a little chili powder and cumin) onto tortilla. Spread a layer of sautéed peppers on top. Spread layer of jack cheese onto to tortilla. Add another tortilla on top and press down firmly. NOTE: It would be best to bake it in the oven to ensure everything will stay in place when cooking it in the frying pan.


    Chorizo Quesadillas

    Ingredients:
  • 2 cheddar-flavored tortillas
  • browned and drained chorizo sausage
  • thinly sliced portabello mushrooms
  • monchego cheese
  • cheddar cheese

  • Directions: Layer cooked chorizo sausage on top of cheddar tortilla. Spread think slices of portabello mushrooms. Sprinkle monchego cheese all over. To add more color add cheddar cheese. Add another tortilla on top and press down firmly. Bake in oven until everything is heated through and the cheese is melted. NOTE: Feel free to experiment with ingredients.


    Fruit Quesadillas

    Ingredients:
  • 2 tortillas
  • Carmelized onions
  • thinly sliced mango
  • rasperries
  • Brie

  • Directions: Spread layer of carmelized onions onto tortilla. Spread mango on top, followed by raspberries. Cut up Brie and spread it all over. Add another tortilla on top and press down firmly. Bake until everything is heated through. NOTE: To carmelize onions, saute them with butter until the color is golden brown.


    Italian Quesadillas

    Ingredients:
  • 2 tortillas
  • sun-dried tomatoes
  • basil leaves
  • pine nuts
  • basol pesto
  • parmesan cheese
  • thinly sliced shiitake mushrooms
  • provolone cheese.

  • Directions: Add layer of sun dried tomatoes, basil leaves, pine nuts and sun dried tomato pesto on tortilla. Spread parmesan cheese, sautéed mushrooms and provolone cheese. Add another tortilla on top, press down firmly and cook till the cheese is melted. NOTE: You can also substitute sun dried tomato pesto for the basil green pesto.


    Shrimp Quesadillas

    Ingredients:
  • 2 tortillas
  • cooked shrimp
  • blackberries
  • grated cheese

  • Directions: Add a layer of cooked shrimp, blackberries and grated cheese onto tortilla. Add another tortilla on top, press down firmly and cook until cheese is melted. NOTE: You can substitute the shrimp with smoked salmon or other cooked fish.


    Chicken Quesadillas

    Ingredients:
  • 2 green tortillas
  • barbeque chicken
  • cheddar cheese
  • jack cheese
  • barbeque sauce

  • Directions: Spread layer of barbeque chicken, cheddar cheese, and jack cheese onto green tortilla. Add another tortilla on top, press firmly down and cook until cheese is melted. NOTE: Instead of serving this with salsa, serve with reserved barbeque sauce.


    Fresh Fruit Salsa

    Ingredients:
  • Store bought salsa
  • pineapple
  • dried cranberries
  • chopped mangoes
  • chopped kiwis

  • Directions: Enhance store bought salsa by adding pineapple, dried cranberries, mango fruit and kiwi into the bowl. Mix and let stand for flavors to enhance. NOTE: You can add any fruit you like. Berries should be added at the very last because they will disintegrate.


    Tomatillo Guacamole

    Ingredients:
  • 2 avocados
  • diced tomatillos
  • diced tomatoes
  • chopped onion
  • chopped jalapeno peppers
  • lime juice
  • crushed garlic
  • fresh cilantro
  • cumin

  • Directions: Add avocados, diced tomatoes, diced tomatillos, chopped onion, garlic, fresh cilantro and jalapenos into mixer. Don’t make mixture too smooth. Add left over tomatillos, jalapenos and cumin into the mixture and mix it by hand. NOTE: You can use more tomatoes to replace tomatillos.
