Directions: Thread 1 inch cubes of smoked turkey and cheddar cheese on frilly toothpicks or plastic swords.


Pigs in a Blanket

Ingredients:
  • 8 turkey hot dogs
  • 2 tablespoon whole grain mustard (or prepared mustard)
  • 1 recipe baking powder biscuits (or one can refrigerator biscuits)
  • Ketchup

  • Directions: Cut hot dogs in half crosswise. Roll out biscuit dough, being careful not to overwork dough. Cut dough into 2 inch squares. Place a hot dog half in the middle of each square. Divide the mustard between all the hot dogs and spread over center of the dog. Wrap the dough around the hot dog and pinch to seal. Place seam side down on a greased baking sheet. Preheat oven to 425 degrees. Bake for 10 to 15 minutes, depending on the thickness of your dough, until golden brown. Serve hot with ketchup.


    Chicken Rolls

    Ingredients:
  • 4 cups chicken meat (cooked and chopped)
  • 4 oz. package of soft cream cheese
  • 2 pkgs. of refrigerated crescent rolls (Pillsbury-reduced fat or one recipe of homemade baking powder biscuits)
  • Butter-flavored spray
  • 1 cup bread crumbs

  • Directions: Combine cooked chicken and cream cheese. Unroll the crescent rolls and lay them out on the counter. Place about 2 tablespoons of the chicken mixture at large end of roll. Fold the ends in and roll up like a burrito, making sure to seal the ends. Spray a baking sheet and preheat oven to 400 degrees. Spray the rolls with butter spray and roll in bread crumbs. Place on sheet and bake for 15-20 minutes, until golden brown. Quick... easy... kids can help and they love them.


    Baking Powder Biscuits

    Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons shortening (I prefer half butter and half solid vegetable shortening)
  • 3/4 cup milk

  • Directions: Preheat oven to 450 degrees. Spray baking sheet with cooking release. Sift dry ingredients together into a bowl. Using a pastry cutter, cut in shortenings until mixture is the texture of coarse corn meal. Pour in the milk and toss the ingredients with a fork or your fingers until they are just blended. Do not over mix. Place dough on a lightly floured board and knead 10 -12 strokes. For fluffy biscuits, do not over knead. Carefully roll out dough to ½ inch thickness for "Pigs in a Blanket" or "Chicken Rolls". Roll to 3/4 inch thickness if simply making biscuits. Cut into rectangles or rounds. If making biscuits, I prefer to place the biscuits close together on the baking sheet, so they will rise into each other. This help them rise higher and stay very moist. Bake for 10 to 15 minutes until golden brown. Always serve immediately with honey butter and all caution to the wind!


    Frozen Chocolate Covered Bananas

    Ingredients:
  • 8 oz. milk chocolate chips
  • 2 tablespoons vegetable oil
  • 1 cup chopped roasted peanuts
  • 8 ripe (but still firm) bananas

  • Directions: Melt chocolate in a double boiler over simmering water. Stir in vegetable oil. Place the nuts in a pie pan for easy rolling. Line a baking sheet with parchment or waxed paper. Peel the bananas and slice into 2 inch pieces. Using a 6 inch bamboo skewer or toothpick, dip each banana into the chocolate and then roll in nuts. You may prefer to leave some without nuts. Place the dipped banana on baking sheet. Place the sheet in the freezer until frozen. If waiting to serve the bananas, remove from the freezer and wrap and return to freezer. Serve semi-frozen.
