Ingredients: 1 pound round of fresh foccacia bread 1 pound deli turkey (thinly sliced) 1/3 smoked gouda cheese (sliced) 12 oz. mixed baby greens 1/3 C. whole grain dijon mustard 1/3 cup low fat mayonnaise Directions: Slice foccacia crosswise, into a top and bottom piece. Spread mayonnaise on bottom half and mustard on the top half. Layer turkey, smoked gouda, and mixed baby greens evenly over bottom half of foccacia. Top with mustard half. Ingredients: 1 cup warm water (105-110 degrees) 1 teaspoon dry yeast 2 tablespoon olive oil 1 teaspoon salt 2 1/2 - 3 cups flour 2 tablespoon olive oil 2 tablespoon fresh parmesan cheese 2 teaspoon dried rosemary 1/8 teaspoon coarse salt Directions: Place warm water in medium mixing bowl. Sprinkle with yeast. Stir to dissolve yeast and allow to stand for 10-15 minutes until mixture begins to foam. Mix in salt, olive oil, and half of the flour. Stir until blended. Add the rest of the flour and mix until mixture begins to pull away from the sides of the bowl. You may not need all the flour as the dough is best if slightly sticky. Place a little of the remaining flour on smooth surface and remove dough to surface. Knead dough for 8-10 minutes until elastic and smooth. Form it into a ball. Lightly oil a mixing bowl. Place the dough in the bowl and turn upside down to lightly oil all sides. Cover with a moistened towel and leave standing in a warm place until doubled in volume, approximately 45 minutes.
Punch the dough down with your fist. Knead for 1-2 minutes. Lightly oil a cookie sheet and free-form dough on sheet. Cover and let dough rise a second time until doubled in size again. Using the tips of fingers, dimple dough all over the top. Brush with olive oil and sprinkle with parmesan cheese, rosemary, and salt. Let dough stand 15 minutes while oven is preheating to 400 degrees. Bake for 25 minutes or until golden brown.
