Everyone enjoys trying items they may not when they order at a restaurant. However, I only serve a "make-your-own" sandwich bar when serving a small group of people. A large group of people take much longer to serve when they are stopping to create their own sandwiches.

Ingredients: 1 small Japanese eggplant 1 zucchini 1 red onion 1 yellow squash 1 red pepper olive oil Southwest seasoning mix Directions: Slice vegetables into uniform 1/3 inch slices. Rub vegetables with seasoning. May be done ahead to this point. Heat stove-top grill. Brush vegetables and shrimp with oil and place on hot grill surface. Ingredients: 4 cups frozen fruit (any combination* - chunked) Non fat yogurt Extract flavorings Ice cubes Fruit juices or water Directions: This is the not a recipe! Let me say that right off. This is simply a list of possibilities. First, you must have a blender. The rest is up to you. My family began by experimenting with left-over fruit. I had prepared too much fruit for guests at a barbecue and I didn't want to throw it away. I bagged the prepared fruit and froze it. A few days later, I found my son, Kaleb, whipping up some of the best drinks I had ever tasted.
We have since refined the process and decided on the combinations we like best. The amount of frozen fruit or ice you use depends on how thick you like your smoothies. Do you like to drink it or spoon it? If I want a more intense flavor, I add frozen juice concentrates instead of juice or water. Extract flavorings can also add a flavor dimension such as coconut, vanilla, mint, or almond. The addition of non-fat yogurt gives the drink a richer, more shake-like, feeling. It can be eliminated for a lighter drink. I always put banana in every drink I make for myself. It adds the most natural sweetness of any of the fruits. Always use ripe to very ripe fruit.
Now you will never throw another piece of fruit away. Freeze it! Perfect for Sunday night popcorn feasts, summer lazy days, after-school snacks. In this menu we are serving it to a group of my health-conscious woman friends who would never order a malt! Oh, no, no, no,... It makes a bagel sandwich and grilled vegetable lunch seem ever so indulgent. Enjoy.

Ingredients: 1 cups of your favorite bottled or fresh salsa 1/2 cup Lime Juice 1/2 Cup Chopped Fresh Cilantro 1 Cup Chopped Mango Directions: Combine all ingredients in bowl. Store covered in refrigerator for up to 10 days. How easy is that for a great tasting slasa!!
